Originally from Kilkenny, Joe gained his love of cooking when his parents put him in charge of making the Sunday roast at an age of thirteen. At the age of sixteen, Joe started chefing in the Newpark hotel in Kilkenny city, where his head chef noticed how talented he was. He was then sent to prestigious Rockwell College to learn how to become a professional chef. Joe has worked in many cities including Galway and London, but has settled in Killarney with his family for the past 30 years.
Joe has featured some of his own recipes in books such as Taste of Killarney and Taste of Ireland.
