Joe Hurley is proud to be the longest serving member of staff in Killarney Royal. Since joining the team in 1985, Joe has claimed the role of Head Chef and has also built a reputation among the local community for great tasting food and excellent attention to detail.
Originally from Kilkenny, Joe gained his love of cooking when his parents put him in charge of making the Sunday roast at an age of thirteen. At the age of sixteen, Joe started chefing in the Newpark hotel in Kilkenny city, where the head chef noticed how talented he was. He was then sent to prestigious Rockwell College to learn how to become a professional chef. Joe has worked in many cities including Galway and London, but has settled in Killarney with his family for the past 30 years. Joe ensures that the high standard of food and service that Killarney Royal prides itself on is maintained. Where possible, his menus will reflect local and in-season ingredients drawn from the wonderful supply of fresh local food from Killarney and the surrounding areas.
Joe has had a tremendous success as a chef and has even had some of his own recipes feature in books such as Taste of Killarney and Taste of Ireland. Joe is very health conscious, and can always be seen walking to and from work everyday. Being a Kilkenny native, he also enjoys supporting the Kilkenny hurling team and enjoys both watching and attending games, and driving his Honda 90 motor bike for charity run’s. Joe is also a volunteer for the Killarney Wheelchair Association. Joe is an integral part of the team at Killarney Royal and is highly respected by all of the staff at the hotel.
Joe’s delicious dishes can be sampled at both The Candle Room Restaurant and The Royal Bar & Bistro.
Both lunch and dinner are served in the elegant Candle Room Restaurant of Killarney Royal. This is the ideal location for a quiet intimate meal with family and friends but also for a larger celebration.
